Barley has a nut-like flavour and is rich in carbohydrates, with moderate amounts of protein, calcium, and phosphorus, plus small quantities of B vitamins. It also contains high levels of fiber. Pearl barley has a chewy texture and mild grain flavour. The grain is harvested with the hull intact and then polished in a “pearling” process, which removes the outer hull and bran layer. This makes it softer and quicker to cook, and it is the most common form of barley available in the market.
