Agar Powder, also known as Agar Agar or kanten, is an off-white, gelatinous substance extracted from Gelidium seaweed that has been dried and powdered. It is a natural, versatile ingredient valued for its strong gelling properties and is often used as a vegan alternative to gelatin. Agar Powder is used across culinary and non-culinary applications — from desserts and jellies to microbiology and plant tissue culture. Its neutral flavor, natural origin, and stability make it a key ingredient in food, cosmetics, pharmaceuticals, and biotechnology.

Use

To prepare, soften 1 teaspoon of agar in 1 tablespoon of cold water, then add 1 cup of boiling water. Stir until fully dissolved and pour into molds.

Agar sets at approximately 35–37°C and can only be re-melted by heating to boiling temperature. Avoid prolonged heating, as it may weaken the gel.

Agar remains stable when thawed after freezing and can be used in fruit pies, jellies, jams, and soups.

Uses include:

- Vegan gelatin substitute for jellies, puddings, and gummy candies.

- Thickening agent for soups, sauces, and gravies.

- Setting agent for desserts such as custards, mousses, and panna cottas.

- Solidifying agent for microbiological culture media.

- Coating for food preservation.

- Ingredient in vegetarian capsules.

- Gelling agent in plant tissue culture.

- Thickener in cosmetic products such as masks, creams, and lotions.
