Xanthan gum is a non-GMO thickening and stabilizing agent produced through the fermentation of simple sugars by Xanthomonas campestris. It appears as a pale yellow powder and adds structure to gluten-free doughs.

[AMAZON] How have I just learned about this marvellous product??? Actually�thank you Pinterest. It has indeed been a game changer for my oil based salad dressings. Just 1/8 tsp for 355 ml of my favorite concoction keeps it from separating and gives it the perfect thickness.I save some of my empty VH stir-fry sauce bottles to store my homemade dressings because the opening is wide enough to easily refill them and the bottle cleaner fits nicely through them also. And because they are glass, they are more bacteria proof than plastic. Just add a coat of spray paint on the lid, a fancy label and voil�! you look like a pro (if that matters to you, lol). Now that I�ve discovered this, I will definitely look for other uses for it.
