Tart-O-Cream is a precise blend of acid-reacting salts and starch that functions as a substitute for cream of tartar. It serves purely as an acidifier and is used to provide volume and stability in certain baked goods.

Calcium Sulphate, Monocalcium Phosphate, Fumaric Acid, Corn Starch



Use

Replace cream of tartar on an equal weight basis in recipes. Use 60% as much in angel food cakes. Do not mix directly with baking soda to form leavening. Ideal for stabilizing egg whites and confections.
