Tapioca flour is a light, starchy flour ground from the cassava root. It is ideal for thickening sauces, soups, and pie fillings and is an essential ingredient in gluten-free baking. It produces crisp, golden crusts and adds elasticity to batters.
Tapioca Flour
Use 1:1 to replace flour in sauces or gravies. Mix 2 tsp tapioca flour with 2 tbsp water to form a paste before adding to hot liquids. Substitute for cornstarch (2 tbsp tapioca = 1 tbsp cornstarch) or rice flour (double the amount). Adds structure and bounce to gluten-free baking.
