Also known as arrowroot flour or arrowroot starch, this product is made by grinding the thick arrowroot rhizomes (rootstalks) into a starchy powder.

Use

Mix an equal amount of arrowroot powder and cold water to create a slurry, then whisk the mixture into hot liquid for 30 seconds. One tablespoon of slurry will thicken one cup of hot liquid. Substitute 2 teaspoons of arrowroot for 1 tablespoon of corn starch or 1 teaspoon for 1 tablespoon of flour.

Commonly used as a thickener for sauces, puddings, and glazes, arrowroot adds a glossy finish to foods. It’s naturally gluten-free and offers a neutral flavor, making it ideal for delicately flavored dishes, breads, and pasta.

Avoid using with dairy-based recipes as it may cause a slimy texture.
