Guar Gum is a natural thickening and stabilizing agent derived from the seeds of the guar plant (Cyamopsis tetragonoloba), a drought-tolerant legume commonly cultivated in India and Pakistan. The guar plant enriches the soil with nitrogen, making it ideal for sustainable crop rotation. Guar gum is a fine, white to cream-coloured powder with no chemical additives and has nearly eight times the thickening power of corn starch. It prevents ice crystal formation and maintains stability through freeze-thaw cycles. It works in both hot and cold foods, adding smooth texture and thickness to sauces, smoothies, and baked goods.

Use

Use the following measurements as a guide when working with guar gum:

- Cold foods (salad dressings, puddings, ice cream): 1–2 tsp per litre of liquid.

- Hot foods (gravies, soups, stews): 1–3 tsp per litre of liquid.

- Gluten-free baking: ¼–½ tsp per cup of flour for cookies, and ¾ tsp per cup for cakes, pancakes, and muffins.

Guar gum acts as a powerful thickener, stabilizer, and emulsifier in foods such as sauces, soups, jams, frozen desserts, and gluten-free baked goods. It enhances texture, prevents separation, and gives frozen treats like sorbets a creamy consistency. It’s also used to improve the texture of homemade noodles and extend shelf life. In jams and jellies, it helps achieve the ideal gel-like consistency.
